Vegetables & Moong Dal Stir Fry Recipe - Pasi Paruppu & Carrot Thoran Recipe


Preparation Time : 15 mins
Cooking Time : 25 mins
Serves: 4

Ingredients:

Yellow Moong Dal / Pasi Paruppu - 1/2 cup
Onion - 1 medium size chopped finely
Curry leaves a sprig
Carrot - 3 medium size chopped finely
Beans - 10 chopped finely

For Seasoning:
Coconut Oil - 1 tblspn
Mustard Seeds / Kaduku - 1tsp
Cumin Seeds / Jeerakam - 1/2 tsp
Urad dal / Ulundu Paruppu - 1 tsp

For Grinding:
Coconut - 1/2 cup
Turmeric Powder / Manjal Podi - 1 tsp
Red Chilli Powder - 1 tsp
Garlic - 3 cloves

Method:

Wash and soak moong dal for 15 mins. Now cook this till it is just cooked, drain and set aside.

Grind the ingredients given for grinding to a coarse mix and set aside. Dont add water when grinding.

Heat coconut oil and add in seasoning ingredients. and let it sizzle.

Add in onions and curry leaves and saute for a min.

Add in carrots and beans and cook till done. Add salt as well.

Add in moong dal and coconut masala and mix well Fry for few mins.

Serve.

Prepare them 

Take grinding ingredients in a blender

crush them roughly and set aside

Cook moongdal till done, drain and set aside
Heat oil and crackle the seasoning, add in onions

add in curry leaves and mix well

add in carrot and beans as well

Once it is cooked, add in dal and ground masala..mix well..

Serve
