Thoran is one of the most commonly made sidedish in a south indian kitchen. We make it with lots of veggies, this version is my favourite. I combined three veggies in this and it taste just fantastic..Make sure your chop the veggies very finely, a chopper works great for this..

Preparation Time : 10 mins
Cooking Time : 15 to 20 mins
Serves: 4 to 6
Ingredients:
Oil - 1 tblspn
Mustard Seeds - 1
tsp
Urad dal - 1 tsp
Curry leaves - a
sprig
Onion - 1 chopped
finely
Beetroots - 1
chopped finely
Carrots -1 chopped
finely
Beans - 10 chopped
finely
Salt to taste
Coconut Oil - 1 tsp
For Grinding:
Coconut - 1/2 cup
grated
Dry Red Chillies - 2
Garlic - 2
Cumin Seeds - 1 tsp
Turmeric Powder - 1
tsp
Method:
Take all the
grinding ingredients in a blender and crush it coarsely. Set aside.
Heat oil in a pan,
add in mustard, urad dal and curry leaves and let them sizzle.
Add in all the veggies and season with salt. Saute for 5 mins till the raw smell leaves from it.
Now sprinkle some
water and cover with a lid. Simmer for 5 to 7 mins till veggies are done.
Now add in coconut
masala and stir fry for 3 to 4 mins.
Now drizzle some
coconut oil and mix well.
Serve
